Green Eggs and Jam

In honor Dr. Seuss’s birthday, we were invited to a fun brunch at a neighbor’s house the day before and decided to dress up for the occasion:

(Thing 1 was mainly interested in the cracker.)

And on the morning of the big day, I made some green eggs and jam*.

Rather than use food coloring on the eggs, I was inspired by Scrambled Eggs Super. 🙂 Mine are made with sauteed then pureed spinach, chopped green bell peppers and sliced green onions (along with garlic, salt and pepper). Yum!

*Caitlyn is in love with the “yam!” my dad spoiled us with: Crofter’s Superfruit Spread. It will be a sad day when our supply runs dry. Currently, every time I open the refrigerator she is hopeful I’m reaching for “mo yam”.
